Xin Nian Kuai Le from our family to yours! Happy New Year! Yesterday was filled with stuffing dumplings! And eating them, hen hao chi! We still have many more to make, but we got through one package of wrappers yesterday. Unfortunately the market didn’t have the kind of dumpling wrappers I was looking for (yes, I cheated), so I got wonton wrappers and we cut them into circles using a biscuit cutter … which is why they have scalloped edges. Kinda cute though, right?
If you are searching for a cookbook that has authentic recipes for jiaozi, I really like Asian Dumplings by Andrea Nguyen. It not only includes recipes for the stuffings and dipping sauces, but also gives fantastic instructions for making wrappers and folding, with a lot of variety. I typically stick with one standard jiaozi recipe (filling found HERE) that I know we all like, but wow the possibilities are endless with this cookbook!
